The Chestnut honey is produced between June and July in the National Park of Gargano, particularly in the Umbra Forest. Far away from urbanized areas or intensive agricultures where bees can harvest this typical dark nectar. It is a particular honey, mostly appreciated by all those who generally do not like too sweet tastes. The bitter taste and the strong aroma do not make it suitable to sweeten, but rather to season or aromatize or, even better, to be tasted just in the way it is. It should be tasted with ricotta, together with parmesan cheese and to prepare dishes where the main ingredient is pork.
